Use a biscuit cutter to cut a hole in the middle of a slice of bread and toast over a medium heat in a frying pan. I used homemade chive butter in the pan to toast it with.
Drop an egg in the hole after both sides of the bread are lightly toasted.
Add slices of tomatoes. I used some sweet golden cherry tomatoes out of my garden.
After 2-3 minutes, add shredded cheese. Sharp cheddar was my choice.
Cover with a lid to let the cheese melt.
Breakfast is served.
